Pizza Muffins with Mushrooms and Turkey Bacon

3/4 cup flour3/4 tsp baking powder1/2 tsp dried oregano4 oz mozzarella cheese, shredded1 cup baby bellas, sliced2 strips turkey bacon3/4 cup milk, fat free1/4 cup egg beaters2 medium tomatoes, sliced into 6 slices each
Preheat oven to 375 degrees. Grease muffin pan. In a large bowl, whisk together the flour, baking powder and oregano. Whisk in the milk and egg.
Saute the mushrooms with salt to taste in 1 tsp olive oil. Stir in 1/2 cup of the mozzarella, the turkey bacon, and the mushrooms into the flour mixture. Let stand for a few minutes.
Stir the batter and divide evenly among the muffin cups. Top with one slice of tomato and a sprinkle of remaining mozarella. Bake until puffed and golden, about 21 to 23 minutes.
Warm pizza sauce in the microwave for about 15 seconds or heat on the stove in a small sauce pan. Serve the muffins with the pizza sauce for dipping.
