Greek Lentils and Quinoa

Ingredients
half cup uncooked lentilshalf cup uncooked quinoa1/4 cup peppers1 bulb shallot1 bulb garlic1/2 cup yellow squashblack olivescherry tomatoesfetabalsamic dressing
Directions
Boil Lentils untill tender, about 40 minutes. Cook quinoa spearately for 10-15 minutes covered. Add garlic, shallot, peppers, and zucchini to frying pan with 1 tbsp olive oil. Season with mediteranean spices. Add cooked lentils and quinoa, cool. Garnish with olives, feta and tomato. Drizzle with balsamic dressing if desired.
