Janet's Beef Barley Vegetable Soup

Ingredients
1 Onion, chopped1/2 Sweet pepper (I like yellow), chopped1/2 Cup celery, chopped1 tbsp Olive Oil1 cup carrots (chopped or julienne)1 can green beans (cut)8 oz. cooked roast beef, cut into bite-size pieces1 cup beef gravy32 oz. beef broth6 beef bouillon cubes6 cups water1.5 cups barley (quick cook)
Directions
Saute onion, pepper, and celery in olive oil in large soup pot, until soft. Add beef broth, bouillon, and water then stir in carrots, green beans, beef and gravy. Bring to a boil. Add quick cook barley, cover and reduce to a simmer. Simmer for 15 minutes, stir occasionally. Everything should be cooked by this time, but I like to simmer for another 15-20 minutes to allow flavors to meld.
