Fiber-iffic Banana Walnut Muffins

Ingredients
2 C Fiber Now Honey Clusters Cereal3/4 C Brown Sugar1 C Walnuts, Chopped1/4 C Applesauce1 C Plain low fat yogurt2 t Vanilla extract1 Egg (large)1 C Very Ripe Mashed Bananas (2 Med)1 C All Purpose Flour1 C Whole Wheat Flour1 t Baking soda1/4 t Salt
Directions
Heat oven to 350 F. Line muffin tin with paper liners. Crush cereal by placing in a resealable plastic bag and crushing with a rolling pin.

In a large bowl, beat sugar and applesauce on medium speed until blended. On low speed, beat in vanilla, egg and yogurt until smooth. Beat in banana, flours, baking soda and salt. Stir in cereal and walnuts until well mixed.

Fill each cupcake liner 2/3 full with batter. Bake approximately 1 hour or until toothpick inserted into center comes out clean.
