1.25 lbs Jenn-o Italian Ground Turkey2 Large Egg Whites1/4 Cup Bread Crumbs Italian Style1/4 Tsp sea salt1/4 Tsp Ground Pepper1.5 Cup Canned Sweet Corn1 Can Diced Tomatoes (Basil, Garlic, Oregano)1 Cup Chicken Broth1 Tbsp Lime Juice1 tsp. Cumin Powder1/4 Cup Chopped Fresh Cilantro
One: In a large bowl, combine turkey, egg whites, bread crumbs, salt and pepper and mix well. Shape into 16 meatballs, each about the size of a golf ball.
Two:
In a large skillet, heat oil on medium high. Add meatballs and cook till brown on all sides. Add corn, beans, diced tomatoes, broth, lime juice, and cumin and mix well. Reduce heat to medium, partially covered and cook till meatballs are cooked through. Stir in Cilantro and serve.
Serving Size: 4 meatballs 1 cup Salsa
