Sweet and Sour Chicken

500g chicken fillet, chopped1 egg yolk1 tblspoon corn flour1 tblspoon soy sauce1 garlic clove crushed1 small tin pineapple pieces, drained1 medium red capsicum, sliced1 medium zucchini, sliced3 tblspoons pineapple juice3 tblspoones sugar3 tblspoons vinegar3 tblspoons tomato sauce1 teaspoon corn flour
Mix chicken, egg yolk, soy sauce and corn flour in a bowl. Cover and refrigerate for 30 minutes.
Spray wok with Canola Spray and heat on medium high. Stir fry chicken til golden brown and nearly cooked through. Add pineapple pieces and vegetables, stir fry 2-3 minutes. Combine juice, sugar, vinegar, sauce and flour in a small jug, mix well. Add to meat and vegetables, bring to the boil and simmer until thickened. Serve with rice.
