Sweet Potato Biscuits

Ingredients
2 cups mashed swt pots2 cups flour (i use whole wheat pastry flour)1/2 cup sugar1 1/4 tsp salt2 tsp baking powder5 Lg TBSP shortening (like Crisco) * I use coconut oil - it tastes great and it's super healthy
Directions
Mix well

drop by spoon on an ungreased cookie sheet

Bake at 400 for 15 minutes

They freeze great. I made extra tonight to freeze for Thanksgiving!
(oh, and 1 lg swt pot is usually about 1 cup)
