Broccoli salad with a twist

2 crowns of broccoli cut up into bite size pieces2 large carrots1 bunch of scallions1/2 c. bacon bits1/2 c. roasted sunflower seeds (optional - to cut back fat and total calories you can leave this out)1/2 c. raisins (optional)Dressing: 1 c. fat free miracle whip2 Tablespoons balsamic vinegar1/3 c. sugar (recipe calls for 1/2 c. but with the vinegar I use, I don't need that much)
start with dressing and make an hour or 2 ahead of time. whisk together all ingredients for the dressing thoroughly (because of the balsamic vinegar, it should be a light brown color, no more white from the miracle whip).
For the salad: chop broccoli, carrots, scallions into bite size pieces and mix well with other ingredients. Stir in dressing and mix well.
Keep stored in refrigerator. If you opt to use regular vinegar, you may need to add more sugar. You can also add other vegetables for nutritional benefit such as red pepper, celery, cauliflower.
Serving Size: makes about 6 cups (nutritional info for 1 cup serving)
