Lamb & Lentil Stew

16oz ground lamb4 large carrots, chopped3 large parsnips, cored & chopped2 large onions, chopped3 garlic cloves1 lb lentils, washed4 C reduced sodium beef broth2 C dry red wine1 28 oz can diced tomatoes in juice3 tbsp tomato paste1 large bunch fresh thyme1-2 stems fresh rosemary
Heat oil in a large dutch oven
Combine lamb & vegetables and saute until lamb starts to slightly brown, about 15min.
Add lentils & stir in
Add broth, wine and tomatoes
Add spice bundles tied with string
Bring to a boil in a dutch oven and reduce heat to medium. Simmer for 45-60min - you MUST stir every 10min! Simmer until lentils are cooked & no longer crunchy.
You can also cook in the oven for 1 1/2 hours on 425, stirring frequently, until lentils are cooked.
