Vegetable Quesadillas

Ingredients
1 cup sliced mushrooms1 tbsp light olive oil1 small zucchini,chopped1/2 cup chopped yellow or red bell pepper1/2 cup sliced green onionsi med garlic clove,minced1 medium tomato,chopped8 flour tortillas(6 inch)21/2 cups mexican blend cheese shredded1 jalapeno,diced can be used with added calories
Directions
In a 12 inch nonstick skillet, brown mushrooms in olive oil.add zucchini,pepper,green onions,garlic and cook until vegetables are tender:stir occasionally.stir in tomato and cook 2 mins more.remove from heat and keep warm
Over med heat brown 1 side of the flour tortilla in 8 in non stick skillet. turn over,sprinkle with 1/3 cup of the cheese and 1/4 cup of the mushroom mixture.Fold in half.cook until browned on both sides and cheese is melted.repeat with remaining tortillas and filling.
