Simple Dairy and Egg Free Sweet Cornbread

Ingredients
*Flour, white, 1 cupYellow Cornmeal, 1 cup Baking Powder, 1 tspSalt, 1/2 tsp*Silk Organic Original Soy Milk, 1.25 cup*Earth Balance Natural Buttery Spread, 4 tbsp, meltedHoney, 3 tbsp*Crisco Pure Vegetable Oil, 1 tbsp
Directions
Preheat oven to 400. Mix all dry ingredients together. Add all wet ingredients except oil. Mix well, but don't over-mix. Pour the oil into one of those aluminum baking pans - the small oblong, rectangular ones so that when it's done it looks like a little loaf of bread. Now, pour in the batter on top of the oil. Bake for 30-40 minutes or until center comes out clean when poked with a wooden kabob skewer (or knife, whatever). Let cool and serve with black eyed peas and baked zucchini spears!
