Cheesy Chicken & Black Soy Bean Soup (Gluten Free & Low Carb)

Ingredients
1 can Progresso Chicken Cheese Enchilada Soup1 can Swanson White Premium Chunk Chicken Breast (drained)1 can Eden Organic Black Soy Beans1 can RO*TEL Original Diced Tomatoes & Green Chilies1 1/2 oz Cabot 50% Reduced Fat Sharp Cheddar1/4 cup Onion (chopped)1 clove Garlic
Directions
Saute onion and garlic. Add black soy beans and tomatoes w/chilies. Bring to a boil. Reduce heat to low and cook for one hour. Drain liquid and add soup and chicken. Bring to a boil. Reduce heat to low and cook for another hour. Add cheese and stir til combined.

Serving Size: Makes 6.5 1-cup servings.
