Banana Apricot Bread

3 c flour1 c sugar2 t baking powder1 t baking soda1 t cinnamon4 T chilled butter, cut into small pieces½ c chopped pecans½ c chopped dried apricots2 large ripe bananas, peeled and mashed1 c clabbered soymilk2 egg sub
Heat oven to 350. Spray loaf pan. Combine dry ingred in a large bowl. Using a pastry blender, work in the butter into the dry ingred. Mix in the pecans and apricots. Stir in the bananas, soymilk and egg sub until well blended. Pour into pan and bake 1 hour. Use toothpick test. Turn onto wire rack.
