* Cinnamon, ground, 1/4 tsp. * Paprika, 2 tsp * Pepper, red or cayenne, 1 tbsp * Turmeric, ground, 1 tsp * Basil, 0.5 tbsp * Salt, 1 tsp * Olive Oil, 2 tbsp * Celery, raw, 1 cup, diced * Garlic, 3 cloves * Onions, raw, 2 cup, chopped * Canned Tomatoes, 1 can * Yams, 2 cup, cubes * Yellow Peppers (bell peppers), chopped * Vegetable Broth, 3 cups * Black-eyed peas (cowpeas), cooked 1.5 cup Can add a bay leaf while simmering. I highly recommend using fire roasted canned tomatoes.
Sauté garlic and onions in olive oil. Add celery and sweet potato and cover and simmer for 5 minutes. Add seasonings and broth, cover and simmer for 15 minutes.
Add tomatoes, bell pepper and peas. Cover and simmer 10 more minutes or until veggies are tender. Taste and adjust seasonings.
