Ingredients
3 1/2 cups pumpkin puree or one 29 oz can1 can Thai Kitchen Coconut milk, about 1 2/3 cups1 qt. low sodium vegetable stock1 large onion, quartered1 apple, quartered1 T honey1 T ginger paste, or minced ginger1 t cinnamon1 t cumin
Directions
Put everything in Vitamix and blend.
