Pumpkin Succotash

Fresh pumpkinoniongarlicgreen beanscorncanned tomatoesbacon
Fry bacon & crumble. (You can use turkey bacon to lower fat, but you'll need to add olive oil.)
Use fresh pumpkin (or any other squash), cut into bite size chunks. Saute in bacon grease (or olive oil) with onion and some garlic (to taste) until onions are translucent.
Add all other ingredients (except bacon crumbles) and cover - simmer until pumpkin is done. You can also put this in a crock pot and take to a potluck!
Add bacon right before serving - YUMM!
