Black Bean & Corn Salad

Ingredients
2 Cup Black Beans1 Cup Frozen Yellow Corn3 Tbsp Minced Cilantro3/4 Cup Chopped Red Onion3 Tsp Olive Oil2 Tsp Balsamic VinegarSalt & Pepper
Directions
Cook black beans according to instructions for about 30 minutes until tender ( I don't like to use canned black beans). Let cool.
Cook the corn according to instructions and let it cool
Mix everything together, add the vinegar, olive oil, salt & pepper and refrigerate until ready to serve.

Serving Size: 1/2 Cup
