green curry beef

Ingredients
curry paste or powder Vegetable stalkgarlic four cloves chopped2 cans of chopped or diced chilies3 cans of whole potatoes1/2 cup coconut milkolive oil2 packs of stew meat or stir fry meat2 cans of chunky mushrooms1 bunch of scallans1/4 chopped white onionginger root sliced or chopped about 1 clove worth
Directions
heat olive oil in dutch oven, saute onion ,garlic cloves,scallans,ginger. Drain chilies (if canned ) and stir in.mix in desired amount of curry paste. Cook for about 5 min on medium LOW. Add beef and brown it. When it has browned add 1 whole carton of vegetable stalk. Turn the heat down and let it simmer. Add coconut milk and mushrooms. Let cook on low covered and stirring occasionaly. Add drained canned potatoes ( you may want to chop them up a bit) an hour before serving or if you put in a crock pot add but leave on low.
