Low Fat, Low Carb Carbonara Sauce

Ingredients
1 tbs olive oil250ml Carnation light evaporated milk2 eggs1 small onion diced1 clove garlic crushed4 rashers bacon diced1 cup sliced mushrooms3 tbs grated parmesan cheese2 tbs finely chopped fresh parsley2 tbs finely chopped fresh basil1/4 cup frozen spinach
Directions
Saute diced onion and garlic in olive oil, do not let it get too brown. Add bacon and cook and then add mushrooms. When mushrooms are soft add evaporated milk and cheese. Lower heat and gently stir through whisked eggs (if temperature is too hot they will scramble). Add herbs and spinach (defrosted in microwave).
Serve on pasta with extra parmesan cheese.
