Tuna and Eggs on Fried Rice

Ingredients
1 can 6 oz. Starkist Chunk Light Tuna in Water (half-drained)6 Large Eggs4 1/2 Cup White Rice, Long2 Tbsp. Soy Sauce1 Tbsp. Garlic Salt1 Tbsp. Butter or Margarine
Directions
1. In a medium skillet, cook the tuna in 1 tbsp. Soy Sauce over Medium-high heat stirring occaisionally until the soy sauce is completely absorbed.
2. Scramble all the eggs in a bowl and pour evenly over the tuna. Stir constantly until the eggs are fully cooked. (You can add some more soy sauce and/or some of the Garlic Salt, as the tuna and eggs absorb a lot of flavor.)
3. Put the eggs and tuna in a large bowl. Melt the butter in the skillet, then fry the rice and the rest of the soy sauce in the skillet. Sprinkle the Garlic Salt over the rice gradually as the rice turns yellow-gold. If the rice seems to be getting dry, add some water -- just enough to keep the rice moist.

I like to serve this recipe in four small bowls with the tuna and rice at the bottom, topped with a pressed dome of fried rice, but you can serve the tuna and eggs separate from the rice or mixed together. Makes 4 servings.
