Fannie Farmer Baking Powder Biscuits

2 C unbleached white flour4 tsp baking powder1/2 tsp salt1/2 tsp cream of tartar1 Tbsp sugar1/2 C shortening2/3 C skim milk
Preheat oven to 425*. Mix dry ingredients in a medium bowl. Cut in shortening. Add milk. Mix and knead lightly. Divide into eight pieces and pat each lightly into a biscuit shape (or roll and cut with biscuit cutter). Place on ungreased baking sheet and bake for 18-20 minutes.
Serving Size: Makes 8 large biscuits or up to 16 smaller ones.
