Crustless Spinach, Onion and Feta Quiche (Gluten Free)

1/2 cup chopped onion6-oz. fresh baby spinach2 large eggs1/2 cup southwest egg substitute1/8 tsp salt1/8 tsp cayenne pepper1 1/3 cups skim milk1/4 cup feta cheese
Preheat oven to 400 degrees.
Lightly grease a pie plate.
In a medium nonstick skillet, cook chopped onion with a bit of cooking spray over medium heat until tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes.
In a large mixing bowl, whisk together eggs, egg substitute, gluten free Bisquick, salt, and ground cayenne pepper. Whisk in milk, then stir in spinach-onion mixture.
Pour into prepared pan. Top with crumbled feta cheese.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.
