Apple Cinnamon Protein Bars

Ingredients
4 scoops Vanilla Whey Protein powder.5 cup almond meal/flour2 tsp baking powder.25 tsp salt2 tsp cinnamon.25 tsp nutmeg.25 tsp allspice3 egg whites.25 cup stevia/ or no-cal sweetener.5 cup fat free cottage cheese1 tsp vanilla1 medium apple- grated
Directions
Spray 8x8 inch pyrex dish with non stick spray. Preheat oven to 350 degrees.
In a large bowl, combine protein powder, almond meal, baking powder, salt, cinnamon, nutmeg and allspice. Whisk together and set aside.
In a smaller bowl, combine egg whites, no-cal sweetener, cottage cheese and vanilla. whisk until well incorporated and then add wet ingredients to the dry and mix again. Fold in grated apple, mix just till combined.
Pour batter in dish and bake for 25-30 minutes.

    Good. Next time I'll spread the batter into a 13x9 inch pan to get thinner bars. The squares were so thick it took me nearly 45 minutes to bake through. - 7/23/12
