Sausage, Potato & Onion Stuffed Peppers

Ingredients
1 Package Johnsonville pork and chicken italian sausage, 5 links, casings removed1 can Crushed Tomatoes (14.5 oz)5 Red Bell Peppers1 sm onion chopped1 Potato, diced1 tsp oregano1 c fresh parsley, chopped
Directions
In 5-6 qt slow cooker, combine tomatoes, oregano and 1/4 tsp each salt and pepper. In a large bowl, combine onion, potato, and parsley. Toss to combine. Add sausage and mix. Using a paring knife at a slight angle, cut tops off peppers; discard seeds. Spoon sausage mixture (about 1 cup each) into the peppers. Arrange peppers upright in slow cooker and place tops over filling. Cook, covered, until sausage is cooked and peppers are tender. (3-4 hours high, 5-6 hours low)
