Healthy Banana Nut Muffins

Ingredients

1/3 cup Splenda1/4 cup olive oil (surprisingly good)1 egg (large) or equivilant of Egg Beaters3/4 cup mashed bananas1/2 teaspoon vanilla 1/2 cup whole wheat flour1/2 cup oats (I used Quick or Old Fashioned) (I've even used Uncle Sam's cereal and it turned out great...gives ya a good cleaning though)2 Tablespoons flax meal (ground flax)1/8 teaspoon baking soda1/4 teaspoon salt3/4 teaspoon baking powder1/4 teaspoon cinnamon1/8 cup of chopped walnuts (or more,more,more)
Preheat oven to 375 degrees. Spray muffin pan with cooking spray (makes 6 muffins)
Blend olive oil and Splenda together, Add all other wet ingredients and blend.
Add dry ingredients and blend until moistened. Add walnuts gently at the end.
Pour into muffin tins (or muffin liners). Bake about 25 minutes until toothpick comes out clean. (Depends on your oven, of course)
These are so good it's hard for me to eat just one.
