Ingredients
1.5 c fish stock1 mackerel, chopped into large chunks1 can sardines1 medium carrot, choppedJuice of 3 lemons6 cloves of garlic, minced0.5 medium onion, chopped1 sprig thyme (optional)
Directions
Place stock , thyme and vegetables in a pot, allow to simmer 10 minutes.

Add fish (doesn't have to be mackerel, it can be any white fish), lemon juice and garlic; simmer 15 mins or until fish is cooked through.

Adjust seasoning to taste. You shouldn't need to add any salt if you have mackerel/ sardines in the pot.
