Ingredients
Black eye Beans, 1 cup (soaked for 2-3 hrs and cooked till tender) Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) Onions, raw, 1 cup, chopped *Cumin seed, 1 tsp Sunflower Oil, 1 1tsp
Directions
Take oil in a pan, add the cumin seeds, once it splutters, saute onions, then add teh tomatoes, once they are pulpy add the beans, salt, chilli powder, garam masala, coriader powder and turmeric. add half a cup water and let it simmer for 5 minutes, garnish with cilantro leaves and serve hot with roti or chapatis.
