Red Beans and Rice (with Smoked Sausage)

1 Cup White Rice, uncooked2 Cup Water (or 1 cup beef broth + 1 cup water)1 Whole Onion (Chopped)1 Whole Green Pepper (Chopped)1 Whole Smoked Sausage (16 oz)1 Can (15 oz) Red or Kidney Beans (Drained)1 Can (14.5oz) Diced Tomatoes (Undrained)
Bring the rice and water (or broth & water). Cover, reduce heat to low, simmer for 20 minutes.
Brown sausage in a skillet over medium heat until evenly browned. Stir in onion and green pepper, and cook until tender. Mix in beans and tomatoes, and continue cooking until heated through. Serve bean mix over rice.
