Hearty Chicken and Vegetable Soup

Ingredients
2Tbs extra virgin olive oil3tsp/cloves garlic2tsp curry powder2 zucchini, grated2 potato, diced1 kumara, diced100g pumpkin, diced1.5 litres chicken stock100g mixed vegetables1 can diced tomatoes1.5 cup leftover chicken, cooked3 slices bacon, diced and cooked
Directions
Heat oil, cook garlic and curry powder for a few mintues.
Add potato, kumara and pumpkin and cook for 5-10 mins.
Add chicken stock, bring to the boil and simmer for 10-15 mins.
Add canned tomatoes and frozen vegetables, bring back to the boil.
Add cooked chiken and bacon, cook for a further 10 mins.
Season to taste.
