Ingredients
1/2 med sized tomato1/2 med sized red pepper4 T chopped scallions5 oz smithfield smoked ham diced2 whole large eggs7 large eggwhiles
Directions
Heat oil, saute' scallions, tomatoes, red peppers, until tender. Add ham and heat; add egg mixture and cook to desired readiness.
