Fat-Free Pumpkin Mousse

1 box (1.34oz) sugar-free, fat-free vanilla pudding mix1/4 teaspoon pumpkin pie spice2/3 cup fat-free evaporated milk1 cup 100% pure canned pumpkin1 1/2 cups fat-free whipped topping
Combine pudding mix and pie spice in medium bowl. With whisk, add evaporated milk; mix until well-blended. Add pumpkin and mix.
Gently fold in whipped topping into pudding mixture. Spoon into serving dishes. Top with additional whipped topping and pie spice, if desired.
Serve immediately, or cover and refrigerate.
