Fried rice

Ingredients
1 cup uncooked rice2 cups water 1 tbs canola oil1 medium carrot, diced1 medium onion, diced2 eggs, scrambled2 tbs soy sauce1 tbs sesame oil
Directions
1. boil water and add rice, let rice absorb water (can cook the night before and cool over night
2. heat canola oil in a large skillet
3. add carrots and onions and saute until soft
4. push veggies to the edge of the pan and add the scrambled eggs in the middle
5. once eggs start to solidify add soy sauce, sesame oil and rice
6. mix all ingredients in pan until rice is coated with the oil and soy sauce

Serving Size: makes 4 servings or 2 large servings
