1 1/2 cups bran flakes, lightly crushed1 cup mashed banana1 egg, beaten3 T plain non-fat yogurt2/3 t vanilla extract1 cup flour1/2 cup Splenda (use whatever sweetener you want and adjust to your taste)2 1/2 t baking powder1/3 t baking soda1/8 t ground nutmeg1/8 t salt
Combine ingredients through vanilla and let sit at least five minutes. Combine remaining ingredients, then stir in banana mixture until just mixed. Scoop into silicone muffin cups (or try nonstick, sprayed, whatever) and bake at 375 degrees for 15-25 minutes, until toothpick tests clean.
