    Preheat oven to 350ºF. In a medium ovenproof skillet, heat olive oil over medium heat. Add vegetables to skillet and cook until soft, about 5 mins. Whisk the eggs, milk, salt, cumin and pepper. Pour egg mixture over vegetables. Cook until about set in the center. Bake for 5 mins. Serve with salsa. - 8/3/14
