Vegetarian Egg, Sausage, Spinach Fritata

1.25 Cups egg beaters or other liquid egg2/3 cup veggie sausage crumbles, or use patties broken up1/2 of a large sweet red, yellow or green pepper, chopped1 cup fresh baby spinach2 oz. fat free feta cheese or blue cheese, with or without herbs added, crumbled1 Tbs. olive oil, plain or flavored
Heat olive oil in large fry pan
add chopped peppers and cook until tender crisp
add sausage crumbles and cook until hot
add spinach and stir/cook until wilted slightly
spread mixture evenly across pan
pour liquid eggs over mixture
sprinkle feta cheese over eggs
cover and cook on medium about 10 minutes, but watch carefully.
Do not stir like scrambled eggs, but lift edges occasionally and tilt pan to distribute liqued eggs to edges to cook faster.
Serves 2-3. I figured this recipe to serve three.
