Easy Lentil Stew

Ingredients
1/2 pound diced ham, browned sausage or browned ground beef.2 cups of beef broth2 1/2 cups of water1 cup of dry lentils1 6oz can of tomato paste2 stalks of celery chopped2 cloves of garlic, chopped1 bay leaf1/4 teaspoon oregano1/8 teaspoon red pepper flakes1 teaspoon of onion powder.
Directions
Brown meat in skillet.

Add beef broth and water to skillet.

Add the rest of the ingredients and stir until tomato paste dissolves.

Bring to boil and then reduce heat.

Cover and simmer for 30 to 45 minutes until vegetables and lentils are tender.

Excellent served as a stew or over rice.

Freezes well.

It is particularly good with Hot Italian Sausage but any kind of ground meat works well. Add additional garlic and red pepper if you use a meat other than sausage.
