Green bean casserole with crispy shallots

.25 c olive oil6 shallots sliced into rings1.5 lbs fresh green beans1 lbs mushrooms sliced6 cloves garlic1tbs fresh thyme3 c low fat milk3tbs flour1/3 and 2 tbs fresh grated Parmesan cheese1/2 c parsley chopped1/4 tsp nutmegSalt and pepper to taste
Oven 375
Heat oil in med skillet
Cook shallots, dry on towel, reserve oil
Steam green beans about 3 min
Heat 1tbs of reserved oil, cook mushrooms till browned
Add garlic and thyme, cook 1min
Remove from pan, into a bowl
Whisk flour and milk together , add to skillet, whisking till thick, about 10 min
Remove from heat, add all other ingredients except 2 tbs of Parmesan cheese.
Oil baking dish
Put in green bean mixture, then top with shallots, then the remaining Parmesan cheese
Bake 20 min
Serving Size: Makes 8 servings
