Healthy Coconut Oatmeal Raison Walnut Cookies

1 1/4 cup Whole Wheat Flour 3/4 cup Sweetened Coconut 3/4 cup Plain Old Fashioned Oat Meal 1/4 tsp Baking Soda 1/4 tsp Sea Salt 1/4 cup Canola Oil 1 Egg 1/2 cup Agave sweetener or Honey 1/2 cup Unsweetened Applesauce1 1/2 tsp Vanilla Extract 1/4 tsp Orange extract 1/2 cup Raisons 1/2 cup Chopped Walnuts
Preheat Oven to 350 degrees
Stir flour, coconut, oatmeal, soda, and sea salt in a medium bowl. In a small bowl stir together oil, egg, agave or honey, unsweetened applesauce, vanilla extract, and orange extract. Pour ingredients in the small bowl into the medium bowl and mix. Once mixed add in the nuts and raisons. Drop dough in by large rounded double filled tablespoons onto a cookie sheet that has been sprayed with Pam cooking spray. Press cookies with a fork. Bake for approx 12-18 min. They should golden brown on bottom and have specks of golden brown on top.
