Scottish Clam Stovies

1 lb chopped clams - drained, liquid reserved 6 small red bliss potatoesbutter flavor cooking spraydried parsleysalt & pepper1 tbsp butter
1 - preheat oven to 375
2 - spray an 8x8 pan with cooking spray to avoid sticking
3 - peel potatoes and slice thinly - I used a mandolin to slice
4 - put a layer of potatoes in bottom of pan
5 - top with 1/4 of clams
6 - season with a little salt, pepper and parsley and give a quick spray with the cooking spray
7 - repeat 4, 5, & 6 three more times
8 - top with final layer of potatoes
9 - pour in some of the reserved clam liquid to about half way up the dish
10 - season top with a little more salt, pepper & parsley
11 - dot top with butter
12 - cover and bake in 375 oven for 1 hour or until desired doneness achieved
