Quick Hoppin John

3 slices bacon, chopped3 scallions, chopped1 can Glory Foods black eyed peas, undrained2 cups cooked brown rice
Chop bacon and cook in skillet. Remove bacon and drain on paper towels. Drain bacon fat reserving 2 tablespoons. Saute green onions in remaining bacon fat until glossy, about 1 minute. add rice and black eyed peas. Stir until warmed through.
Serve hoppin john as a side dish with traditional southern favorites like fried chicken or as a main dish.
Hoppin John is tradditionally made with white rice. Brown rice adds a slightly nutty flavor, while increasing the fiber content.
