Crock Pot Minestrone Soup

Ingredients
1/2 med. Onion, choppedCarrots, raw, 1 cup, chopped Celery, raw, 1 stalk, choppedGarlic, 2 cloves minced28 oz canned Diced Tomatoes15 oz can white kdney beans )Rosemary, dried, 1 tsp 2 Bay Leaves1/4 c BasilZucchini, choppedSpinach, fresh, 2 cup chopped2 cups small shell pasta cooked al denteGrated Parmesean Cheese optional3 chicken bouillion cubes3 cups Water, boiling
Directions
1) Rinse and drain beans...puree in food processor. Place in Croch pot
2) Dissolve cubes in boiled water. Add to crock pot
3) Add onions, carrots, celery, garlic, tomatoes, rosemary, and basil to crock pot.

Cook on low 8 hours.

4) 40 minutes before serving, add zucchini and spinach to crockpot and cook 30 minutes more.
5) Add cooked pasta and cook 10 minutes more.

Sprinkle your soup with grated parmesean cheese if prefered (Recipe includes about 1tsp/serving in the caloric info)
