Crockpot African Peanut Stew

Ingredients
2 bonelss, skinless chicken breasts cut into 1-inch chunks (about 2 lbs)3 medium sweet potatoes, peeled and chopped into 1-inch cubes3/4 Cup creamy peanut butter2 14.5 oz. cans of diced tomatoes, undrained (I use fire roasted)1.5 Cup chicken broth1 TBS dried minced onions1 tsp ground Ginger1 6 oz can tomato paste2 tsp curry powder1 tsp red pepper flakes1/2 tsp Kosher salt
Directions
Use a 6-quart slow cooker. Put the chicken into the bottom of the slow cooker. Add the sweet potatoes, peanut butter, diced tomatoes and broth. Add the dried onion and all of the spices. Don't worry about stirring now, the peanut butter will make it difficult. Cover and cook on low for 6-8 hours or on high for 4-5 hours. Stir well before serving.
