Ingredients
Directions
2 lbs boneless, skinless chicken breasts1 Cup of your favorite BBQ sauce5 oz frozen broccoli (half a package)2 Cups cooked white rice
Weigh the chicken and measure the BBQ sauce.
Roughly "layer" the two ingredients in the slow cooker so there is some BBQ on each chicken piece. Everything will cook down into the sauce, so you don't have to go crazy with this!
Set the cooker on low for 8 hours or high for 4.
About 1 hour before serving, make the rice. (Easy as pie if you have a rice maker with a time delay!)
When you poke the chicken with a fork and it falls apart, it is done. Remove the chicken to a plate or large bowl and shred with 2 forks.
About 10 minutes before serving, steam the broccoli in a pot or in the microwave.
Make a plateau of rice and broccoli and top with chicken and sauce from the crock pot.
Serving Size: makes 4 ~200 calorie servings
