Steam-Bag Greek Chicken

Ingredients
4 oz chicken breast, cut into bite-size pieces1 oz crumbled feta cheese (I used reduced fat)1 tbsp Kalamata olives, pitted and roughly chopped1/4 Tablespoon lemon juice1/4 teaspoon olive oil1/4 teaspoon dried oreganoDash of black pepper
Directions
Combine all ingredients in a steam bag. You can reserve a little feta for garnish.

When ready, place in microwave in a single layer. Microwave for 6- 7 minutes, until chicken is cooked through.

Let stand for a minute, then pour out and garnish. Serve with rice, couscous or pita.
