Spiced Cucumber Salad

Ingredients
1 cucumber1/3 cup rice vinegar1/4 tsp sesame oil1 tbsp honey1 tsp crushed red pepper.25 cup scallions, chopped1 tsp kosher salt
Directions
1. Cut the cucumber into half moons.
2. In a small bowl, combine all other ingredients. Pour over cucumbers and toss to coat.
3. Refrigerate for 30 minutes.

    This was really worth making. I enjoyed it and so did my daughter. The only thing I will do differently next time is to put less of the rice vinegar. It was a little too overpowering for my taste, but still delicious! - 11/13/11
