Grits with Goat cheese

2 14 1/2-ounce cans chicken broth 1/2 cup water 1 cup quick-cooking grits 1/2 onion, diced 1 tsp crushed garlic 1 tsp chipotle adobo sauce 4 ounces soft fresh goat cheese 1/2 tsp cayenne fresh ground black pepper
Melt butter in dutch oven. Sweat onions. Add garlic. Add tsp of chipotle adobo sauce and cayanne. Stir. Add broth & water. Bring to boil. Slowly wisk in grits. Bring to boil.
Cover. Reduce heat to simmer. Cook for 5-6 minutes. Uncover. Mix in goat cheese until melted.
Serving suggestion: grilled shrimp and roasted tomatoes and sweet peppers.
Serving Size: Makes 10-11, 1/2 cup servings
