Mattar (Peas) Mushroom Masala

2 cups mushrooms, quartered1 cup green peas, fresh or frozen1½ cups water2 medium onions, chopped1 tablespoon ghee (clarified butter)½ cup tomato puree3 tablespoons cashew butter (or ground cashews)1 tablespoon ginger paste1 tablespoon garlic paste4 green cardamom pods, whole1 cinnamon stick1 teaspoon turmeric1 teaspoon coriander powder1 teaspoon garam masala½ teaspoon red chili powder (or more to taste)salt to taste

Clean & quarter mushrooms and chop onions finely.
Sauté green cardamoms, cinnamon stick and dry spices in butter at medium heat until fragrant and golden. Add onions and cook 3 minutes.
Add ginger, garlic and tomato puree and cook another 2 minutes.
Add the cashew butter along with water and stir well. Bring it to a boil and then add the green peas & mushrooms. Simmer on medium high for 6 to 8 minutes or until peas are fully cooked and liquid is reduced and thickened.
Remove cardamom pods & cinnamon stick.
Serve hot with rice.
