Country Breakfast in a Pepper

20 Reduced Fat Wheat Thin Crackers3 Duck Eggs46 oz bottle of V8 juice8 Large Green Peppers1 Lb Turkey Bacon1 Lb Sweet Italian Turkey Sausage1 Large Red Pepper1 Large Yellow Pepper1 cup of fresh sliced mushrooms
Wash and core the 8 Green Peppers
Cook the Turkey bacon according to the package.
Add the following to the food processor:
Red Peppers
Yellow Peppers
Mushrooms
Turkey Bacon
In a bowl:
Peel the casing off of the sausage and then add
Add the processor mixture above
Add the 3 eggs
Stuff the peppers
Place into the crockpot and pour the V8 juice over the peppers.
Turn the crockpot on high for 4 hours (if cooking during the day) 8 hours on low (if you cooking over night)
*If you would like to add a fat free cheese on top of these you can but I don't think it's needed.
