Tarragon Chicken Salad with Spicy mustard vinegrette

14.5 oz of Shredded Chicken (canned or left over)1/2 cup of LIGHT mayo1/2 cup of red onion1/2 cup of red peppers2 tbls of tarragonpinch of salt and pepper4 leaves of romaine lettucered onionred pepperscherry tomatoes4 tbls of brown spicy mustard3-4 tlbs of red wine vinegar1 tbls of olive oil
mix together the chicken, mayo, onions, red peppers, tarragon, salt and pepper.
Get out 2 bowls (or to go containers)
Use 2 leaves of lettuce in each bowl
put some onion and peppers and cherry tomatoes
Serve the chicken on top of the salad.
To Make the Dressing:
mix together the mustard and ad red wine vinegar to your taste. Ad 1 tbls of olive oil
Only spread about 2 Tbls of the dressing on the salad, even that may be too strong.
