Easy Vegan Potato Soup

Ingredients
Olive Oil, 2 tbsp Onions, raw, 1 cup, chopped Garlic, 3 cloves, crushedCelery, raw, 1 cup, dicedWhite Wine, 1 fl ozCurry powder, 1 tbspSalt, 3 tspPepper, black, 2 tspCoriander seed, 1 tbsp, crushedPepper, red or cayenne, 1 tsp Potato, raw, 3 or 4 large, dicedWater, tap, 4 cup (8 fl oz) Bay Leaf, 1 leafRice Dream Original rice milk, 1.5 cup Nutritional Yeast,
Directions
cook garlic, onion, celery in olive oil until softened. add spices. cook another minute or so then deglaze with white wine (optional). add potato and enough water to cover. toss in bay leaf. gently boil until potatoes have softened. lower heat. Using an immersion blender, blend until desired consistency. I like it a little chunk. Add rice milk until thinned to desired consistency. Top with nutritional yeast flakes for a little added flavor and a healthy boost.
